Tasting
Note : |
| The grapes for this wine were sourced from two vineyards at the southern end of McLaren Vale. Both these sites show unique aromas, flavours and structure that add complexity to this wine. 2005 was a great vintage in South Australia with a warm and steady ripening season giving great concentration of colour and flavour. Deep dark red in colour, the nose offers blackberry and prune fruit notes all supported by subtle vanilla and cedar accents.14 months maturation in French and American barriques has added supple tannins which all lead to a very long finish. Drink now but it will cellar for many years. |

Note : |
The nose displays sweet red fruits; raspberry, plum and mulberry with nutmeg and cinnamon. The palate is soft and rich with blackberry and plum evident. The oak is well integratd and the finish is long with ripe, chocolate tannin. Drinking well now but will benefit with some additional time in bottle.

Note : |
Deep, dark red in colour with a purple hue, this wine shows a huge lift of cherry blossom, dark chocolate, spice, coffee, and ripe blackberries, along with complimentary oak on the bouquet. The palate is very rich and ripe, full bodied, with round mouthfeel and very long finish. Will reward careful cellaring, a it will improve for up to 10 years after release. |

Note : |
"The 2004 shiraz "Command" comes from a single block of 104 year old vines. It was aged in 100 per cent new oak puncheons (400 litre barrels). Opaque purple coloured, this shiraz has fabulous aromatic of smoke, melted tar, licorice, espresso, game and blueberry compote. Layered but tight, this full-bodied wine is thick, rich and totally hedonistic. The finish lasts for 60 seconds. However, be warned. This monumental shiraz needs 10-15 years to fully unfold. It will provide pleasure through 2035."
