The classic 2007 sauvignon blanc is a hand-picked single vineyard wine from one of the highest sites in the Adelaide Hills. It was cold fermented in stainless steel and clarified in a carefully selected blend. The nose is highly aromatic with gooseberry and passionfruit aromas predominating. The length and intensity of the fruit is good, with a good acid balance avoiding the "dumb" fruit balance of many cheaper sauvignon blancs. Drink with shellfish, prawns or tapas.

This wine is ripe and complex aromatics of nectarine, ruby grapefruit, white peach and lime.  The palate is full and generous with flavours of stonefruit and ripe citrus.  A viscous, coating texture gives this a wine feeling of volume without heaviness. The wine finishes strongly with an appealingly dry, mineral character.

The 07 vintage saw its challenges in late spring with frosts affecting flowering,but the low yields were obviously to our advantage. Flavours explode from the glass! Intense lime and citrus, exotic fruit and floral notes...This is a bright, crisp and fresh Sauvignon Blanc, but in keeping with the Isabel style it offers good palate weight while maintaining elegance and balance. Certainly enjoyable in its youth, this wine willcontinue to develop in years to come.
