An elegant and fresh cool climate chardonnay from Macedon, Victoria. Aged in two and three year old French oak to add layered complexity to the varietal characters of this wine. Apricot and honey flavours on the palate, with excellent acid structure leaves a lingering dry finish that screams for white meat or pasta!

Fruit is sourced from mature vine Chardonnay grown on two quite different sites, Dixon Creek where the flavours are a little richer and fuller and the upper Yarra Valley where flavours are fine and elegant. The winemaking included whole bunch pressing, fermentation in cash as well as lees stirring to increase complexity, texture and balance. Minimal handling was adopted to preserve fruit flavour. Cellar for at least 4 years in a good cellar.

Straw-yellow in colour, this medium-weight fruit-driven chardonnay displays aromas of fresh melon, peach and citrus. The palate shows hints of stone fruit and pear, with lingering natural acidity. Partial barrel ferment, aging in French oak and malolactic fermentation have resulted in a richness and complexity that complements the primary fruit characters of the wine. Offering excellent drinking now, this wine will also cellar for another three to five years.
