The palate is ample and well structured. The balance is exquisite, the texture astonishingly light, and the finish harmonious with rich intermingling flavours.

The nose is intense and clean with notes of candied fruit, especially wild strawberry. It carries suggestions of almond and red currant jelly. Good weight on the palate with slight acidity. Mouthfeel is fleshy, fresh and tender. Definitely balanced with very silky texture. The finish is lively, not aggressive, with persistent length.

The intense robe, which is golden yellow with satiny tints, gives rise to abundant fine bubbles. The powerful note of preserved fruits (citrus and apricot), honey and dry straw develops into brioche and smoked notes. On the palate it is well rounded and generous. The mineral quality characteristic of vintage 2000 is well in evidence. The smooth and complex finish reveals a very suitable dosage.

"This is by far my favourite rose, so fresh and mouthwatering. It is made without the addition of red wine (as are most) ; instead it is a blend of 35 percent pinot noir, 35 percent pinot meunier and 30 percent chardonnay, cold-fermented in stainless steel with cultured yeasts. When is a vintage not a vintage - Answer - when it's Charles Heidsieck Mis en Cave. They blend it up then put the date on the label and disgorge it three years later, so it has three years on yeast lees, plenty of time to develop the nutty, biscuity flavours of top grade champagne. This bubbly has plenty of mid-palate weight and finishes bone dry. A great food wine, Huon Hooke suggests you drink it with mushroom pastries. Sounds good to us!

Gauthier Brut Vintage 1999 is the result of a subtle blend of chardonnay (40%) which brings finesse, elegance and lightness, pinot noir (20%) which confers strength and structure and pinot meunier (20%). The nose displays intense flavours of candied fruits, honey and dry hay. The palate shows good balance between elegance and strength. The smooth finish is revealed by a good and specific dosage.
